CREAMY LOADED FAUX TATO SOUP

Ingredients

  • 2.5 pounds cauliflower florets or 3 bags of frozen cauliflower

  • 4 cloves fresh garlic

  • 1/2 onion chopped

  • 1 quart chicken broth

  • 1 quart water

  • 1/2 tsp salt

  • 1 tsp pepper

  • 8 oz cream cheese, softened - cut into quarters

  • 4 oz sharp cheddar grated (Or Monterey Jack)

    Favorite Toppings:

    Bacon crumbles

    Sour cream

    Green onion

    Additional cheddar

    Diced onion

    Like it spicy?

    Chopped or diced Jalapeno

    Hot sauce


Instructions

Chop the cauliflower into chunks. Frozen cauliflower works great too and then it’s always on hand. Add cauliflower, garlic, onion, broth, water, salt, and pepper to the instapot on high pressure for 10 minutes.

When the time is up, release the pressure of the instapot, add grated cheese and cream cheese. Use an immersion blender or food processor to blend until blended and creamy. Top with your favorite toppings and ENJOY!
